Miso Mashed Potato Soup

Mmmm... I recreated a fabulous soup at the new Japanese restaurant that opened. It's called Zing. They have a fantastic mashed potato soup. It was amazing, and I was craving it, so I decided to recreate my own version: Miso Mashed Potato Soup Ingredients: One medium carton of mashed potatoes (sans gravy). One carton of miso soup. Hot water Directions: Pour contents of miso soup mix into a large bowl. Boil one large mug of hot water. Pour water into miso soup mix. Pour mashed potatoes into soup. Make soup as lumpy or smooth as desired. Mmmm! The only ingredient that was missing was a small dollup of wasabi. Next time...

From the Scorch Files: Rice and Soup Delight for Two

Steve found an easy-peasy recipe from an advertisement:
Rice and Soup Delight for Two

one rice maker (Toastmaster)
2 cups of white or brown rice
2 cups of cold water one large can of Chunky Beef and Vegetable soup

Set out two plates. Put two cups of water and two cups of rice in rice maker. Push button down to cook. Button will click off when finished. Leave rice in rice maker. Pour contents of soup into another container and put in microwave. Set microwave to 1 1/2 to 2 minutes on high. When finished, pour rice on plates first, then pour contents of soup evenly over the rice. You may want to pour most of the liquid from the soup into another bowl and leave the beef and vegetables on top. Also, you can make it with chicken or vegetarian. You can also opt for low-sodium choices. To make a dinner for four, you can multiply the measurements by two.

New Restaurant

Friday night my friends and I visited a new restaurant. Cafe Navarre is located in a historical building in downtown South Bend. The venue is gorgeous and the food was amazing. I also saw people from my past: a friend from the public library and a former student. I am glad I ventured out! I recommend the scallops and the creme brulee. Here's the url: http://cafenavarre.co/

Happy New Year and Cookie Sheets

Happy New Year! Hope you are having a good first week. So far, so good.
I visited my friends at the LaSalle Branch Library and discussed culinary issues. My former colleague and friend A. gave me this tip about avoiding scorched cookie sheets: parchment paper. When baking, place parchment paper down first. Then you don't have to place oil or anything on the sheet before placing your cookies, etc. on it. Also, it makes for easy cleanup for the tray. Easy peasy! Thanks, A for the tip! Now we just need to buy new cookie sheets to go with the parchment paper...
